Mt. Moosilauke (1921) - Moosilauke Recipes
Moosilauke Griddle Cakes
2 cups white flour
1 1/4 cups Buckwheat
3/4 cups cornmeal
2 teas/tablespoonful of baking powder
2 tablespoonfuls sugar
1 level teaspoonful salt
Beat in egg after batter arrives at right consistency.
Rhubarb Wine
8 lbs rhubarb
8 qts water
6 lbs sugar
grated rind four lemons
Chop rhubarb, add lemon rind + water; stand 3 days; strain, add sugar, pour into crock, cover with muslin, let stand 2 weeks. Bottle at end of month.
Mountain Mince Meat
2 lbs minced suet
6 " Boiled Beef
9 " Apples
2 " sugar brown
4 " raisins
nutmeg
juice 3 lemons
" 3 oranges
2 cups molasses
2 tb cinammon
1 tb cloves
1 " allspice
1/2 t salt + 1 qt cider or grape juice
Elderberry wine
1 qt elderberry blossoms
3 gal. cold water
9 lbs sugar
1/2 cup lemon juice
1 yeast cake
Boil the blossoms in half the water + half the sugar for fifteen minutes. Boil balance of sugar in water. Add lemon juice + put in stone jar + stir morn + eve for 1 week. Strain, add 3 lbs raisins + let stand 23 weeks. Add teaspoonful alcohol to each qt wine + bottle with one raisin. Blossoms best gathered in June. Too much of stems makes for bitterness.
